A retro holiday fruit salad with marshmallows and a light Greek yogurt twist.

Ingredients

  • 2 cups mini marshmallows
  • 1 can mandarin oranges, drained
  • 1 can pineapple chunks, drained
  • 1 cup seedless grapes, halved
  • 1 cup shredded coconut
  • 1 cup Greek yogurt
  • 1/2 cup whipped cream
  • 1 tbsp honey
  • 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, combine marshmallows, mandarin oranges, pineapple chunks, grapes, and coconut.
  2. In a separate bowl, mix Greek yogurt, whipped cream, honey, and vanilla extract.
  3. Fold the yogurt mixture into the fruit mixture until evenly coated.
  4. Cover and refrigerate for at least 2 hours before serving.

Notes

  • For a lighter version, use only Greek yogurt and skip the whipped cream.
  • Make ahead and refrigerate overnight for best flavor.
