- 8 cups chicken or turkey broth
- 2 cups cooked turkey, shredded or diced
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 1/2 cup egg noodles
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
- In a large pot or Dutch oven, combine the broth, carrots, celery, and onion. Bring to a boil over medium-high heat.
- Reduce heat and simmer for 10-15 minutes, or until vegetables are tender.
- Add the cooked turkey, egg noodles, thyme, and rosemary to the pot.
- Continue to simmer for another 8-10 minutes, or until the noodles are cooked through.
- Season with salt and pepper to taste.
- Stir in fresh parsley, if using.
