  • 8 cups chicken or turkey broth
  • 2 cups cooked turkey, shredded or diced
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/2 cup egg noodles
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a large pot or Dutch oven, combine the broth, carrots, celery, and onion. Bring to a boil over medium-high heat.
  2. Reduce heat and simmer for 10-15 minutes, or until vegetables are tender.
  3. Add the cooked turkey, egg noodles, thyme, and rosemary to the pot.
  4. Continue to simmer for another 8-10 minutes, or until the noodles are cooked through.
  5. Season with salt and pepper to taste.
  6. Stir in fresh parsley, if using.
  7. Serve hot.
