1 tablespoon vegetable oil
1 pound ground beef (80/20 recommended)
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon gochujang (or sriracha for a milder heat)
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 teaspoon black pepper
Cooked rice, for serving
Optional toppings: sliced green onions, sesame seeds, shredded carrots, kimchi
Instructions
Heat vegetable oil in a large skillet over medium-high heat.
Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess grease.
Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
In a small bowl, whisk together soy sauce, brown sugar, gochujang, rice vinegar, sesame oil, and black pepper.
Pour the sauce over the beef in the skillet. Stir to combine and cook for 2-3 minutes, allowing the sauce to thicken slightly.
Serve the Korean beef mixture over cooked rice.
Add your favorite optional toppings like green onions, sesame seeds, shredded carrots, or kimchi.
Notes
If you don’t have gochujang, you can substitute with sriracha and a pinch of sugar for a similar flavor profile.
For meal prep, divide the cooked beef and rice into individual containers. Add fresh toppings just before serving.
