Ingredients
Scale
1/2 cup olive oil
1/4 cup grated Parmesan cheese
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 clove garlic, minced
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon black pepper
2 anchovy fillets, minced (optional, for authentic flavor)
Instructions
Combine olive oil, Parmesan cheese, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, salt, pepper, and anchovy fillets (if using) in a bowl.
Whisk ingredients together until well combined and emulsified.
Taste and adjust seasoning as needed.
For a smoother consistency, you can use an immersion blender or a regular blender.
Transfer the dressing to an airtight container.
Notes
For a creamier dressing without raw egg, you can add 1-2 tablespoons of mayonnaise.
If the dressing breaks (separates), whisk in a teaspoon of water or lemon juice to help re-emulsify.
This dressing will last for about 5-7 days in the refrigerator.
Adjust the amount of garlic and anchovy to your preference for a balanced flavor.
