A crispy oven-baked alternative to boxed fish sticks, perfect for kids and meal preppers.

  • 1 lb white fish fillets (cod or haddock)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut fish fillets into 1-inch strips.
  3. In a bowl, mix panko, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Beat eggs in another bowl.
  5. Dip each fish strip into the eggs, then coat with the panko mixture.
  6. Place coated strips on the baking sheet. Drizzle with olive oil.
  7. Bake for 12-15 minutes, flipping halfway, until golden and crispy.
  8. Serve with kid-friendly dips like ketchup or tartar sauce.

Notes

  • For extra crispiness, spray fish sticks lightly with cooking oil before baking.
  • Use gluten-free panko if needed.
