Oh honey, no. Trust me on this – I tried it during a winter peach craving and it was a sad, mushy mess. Frozen peaches contain too much water, so they steam instead of caramelizing on the grill. You’ll end up with peach soup (tasty, but not what we’re going for!). Stick with fresh, ripe peaches for those perfect grill marks.

Can I make grilled peaches ahead of time?

They’re definitely best fresh off the grill when the honey’s all glossy and warm. That said, if you must prep ahead, grill the peaches (without honey) and store them in an airtight container for up to 4 hours. Right before serving, warm them slightly and drizzle with honey. The texture won’t be quite as magic, but still delicious!

How do I store leftovers?

If you somehow have leftovers (rare in my house!), pop them in the fridge for 1-2 days max. The honey will solidify, so I like to reheat them for 30 seconds in the microwave before eating. They make an amazing yogurt topping the next day – though the texture will be softer without those crispy edges.
