A crunchy, finely chopped cabbage-cucumber salad with a vibrant green herb dressing. Vegan and perfect for meal prep.

Ingredients

  • 2 cups shredded green cabbage
  • 1 cup diced cucumber
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped green onions
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cabbage, cucumber, parsley, cilantro, dill, and green onions.
  2. In a small bowl, whisk together tahini, lemon juice, olive oil, garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Refrigerate for at least 30 minutes before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Add avocado or nuts for extra creaminess or crunch.
