  • 1 bag tortilla chips
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/4 cup sliced black olives
  • 1/4 cup pickled jalapeños
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with the chopped onion and bell pepper. Drain any excess grease.
  3. Stir in the taco seasoning and 1/4 cup of water. Simmer for 5 minutes.
  4. Spread the tortilla chips in a single layer on a baking sheet.
  5. Spread the refried beans over the chips.
  6. Spoon the seasoned ground beef mixture over the beans.
  7. Sprinkle both cheeses evenly over the beef.
  8. Top with black olives and jalapeños.
  9. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
  10. Serve immediately with your favorite optional toppings.
