- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs, separated
- 1 3/4 cups milk
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- Preheat your waffle iron according to manufacturer instructions.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the egg yolks, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
- Gently fold the beaten egg whites into the waffle batter until no white streaks remain.
- Lightly grease the waffle iron if needed. Pour the recommended amount of batter onto the hot waffle iron.
- Cook for 3-5 minutes, or until golden brown and crisp.
- Carefully remove the waffle and repeat with the remaining batter.
- Serve immediately with your favorite toppings.
Notes
- For extra crispiness, you can add a tablespoon of cornstarch to the dry ingredients.
- If you don’t have a waffle iron, you can make pancakes with this batter.
- This recipe is a great base for adding mix-ins like blueberries or chocolate chips.
