Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate medium bowl, whisk together the buttermilk and eggs.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Gently stir in the melted butter.
  5. Heat a lightly oiled griddle or non-stick frying pan over medium-high heat.
  6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  7. Cook for about 2-3 minutes per side, or until golden brown and cooked through. Flip when you see bubbles forming on the surface.
