Ingredients

Scale
  • 1.5 lbs white fish fillets (like cod or tilapia), cut into 1-inch pieces
  • 1 cup all-purpose flour
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • Vegetable oil, for frying
  • 8 small corn tortillas
  • 1/4 cup mayonnaise
  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 1 tbsp lime juice
  • 1/4 tsp salt
  • 4 cups shredded cabbage
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 1 lime, cut into wedges

Instructions

  1. In a shallow dish, combine flour, chili powder, cumin, garlic powder, salt, and pepper.
  2. In another shallow dish, place the beaten eggs.
  3. In a third shallow dish, place the panko breadcrumbs.
  4. Dredge each fish piece first in the flour mixture, then dip in the egg, and finally coat with panko breadcrumbs. Place on a plate.
  5. In a small bowl, whisk together mayonnaise, minced chipotle peppers, lime juice, and salt for the sauce. Set aside.
  6. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to 350°F (175°C).
  7. Carefully add the breaded fish pieces to the hot oil, working in batches. Fry for 3-4 minutes per side, until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
  8. Warm the tortillas according to package directions.
  9. To assemble the tacos, place a few pieces of fried fish on each warm tortilla.
  10. Top with shredded cabbage, cilantro, and red onion.
  11. Drizzle with the chipotle crema.
  12. Serve immediately with lime wedges.

Notes

  • For a spicier sauce, add more chipotle peppers.
  • You can bake the fish instead of frying for a lighter option. Toss the breaded fish with a little oil and bake at 400°F (200°C) for 12-15 minutes, flipping halfway.
  • Consider using this recipe as a base for your meal planning.
