Teriyaki Chicken Stir Fry

A quick and healthy stir fry with homemade teriyaki sauce, ready in 20 minutes.

Ingredients

  • 1 lb boneless chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp oil

Instructions

  1. Heat oil in a wok or large skillet over medium-high heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add vegetables and stir-fry for 3-4 minutes until crisp-tender.
  4. In a small bowl, mix soy sauce, honey, rice vinegar, ginger, and garlic.
  5. Pour sauce over chicken and vegetables, stirring to coat.
  6. Mix cornstarch with water and add to the pan. Cook until sauce thickens, about 2 minutes.
  7. Serve hot over rice or noodles.

  • Use pre-cut vegetables for faster prep.
