This recipe delivers the comforting flavor of a classic Southern peach cobbler using canned peaches for a quick bake. You get a warm, sweet dessert with a simple, buttery topping in less than an hour.

  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon

  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9-inch square baking dish.
  2. In a medium bowl, combine the undrained canned peaches, 1/2 cup sugar, lemon juice, cinnamon, and nutmeg. Stir gently to coat the peaches. Pour this mixture into your prepared baking dish.
  3. In a separate bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt for the topping.
  4. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the milk and vanilla extract until just combined to form a thick batter. Do not overmix.
  6. Drop spoonfuls of the batter evenly over the peach mixture in the baking dish. It does not need to cover the fruit completely; the topping will spread as it bakes.
  7. Bake for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbly around the edges.
  8. Let the cobbler cool for at least 15 minutes before serving. Serve warm with vanilla ice cream or heavy cream.

  • You can substitute fresh or frozen peaches for canned, but if using fresh, you may need to add 1/4 cup of water to the filling mixture.
