Easy pizza pockets made with simple ingredients. These hand pies are perfect for lunchboxes, snacks, or a quick dinner. You can bake them or air fry them, and they freeze and reheat well.

Ingredients

Scale
  • 1 can (8 oz) refrigerated biscuit dough
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). If air frying, preheat your air fryer to 350°F (175°C).
  2. Lightly grease a baking sheet or line with parchment paper.
  3. Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a rough circle or square.
  4. Spoon about 1 tablespoon of pizza sauce onto one half of each flattened biscuit, leaving a small border.
  5. Top the sauce with about 2 tablespoons of mozzarella cheese and a few pieces of pepperoni.
  6. Fold the other half of the biscuit over the filling to create a pocket. Press the edges firmly with your fingers or a fork to seal.
  7. Place the sealed pockets on the prepared baking sheet or in the air fryer basket.
  8. Brush the tops of the pockets with the beaten egg wash and sprinkle with Parmesan cheese, if using.
  9. Bake for 12-15 minutes, or until golden brown and puffed. If air frying, cook for 8-10 minutes, flipping halfway through, until golden brown.
  10. Let cool slightly before serving.

Notes

  • For a healthier option, use whole wheat biscuit dough.
  • You can customize the fillings with your favorite pizza toppings like cooked sausage, mushrooms, or bell peppers.
  • To freeze, let the pockets cool completely, then wrap them individually in plastic wrap and place them in a freezer bag. Reheat in the oven or air fryer until warmed through.
  • These are great for meal planning.
