3 cups sweetened shredded coconut
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil (for melting chocolate)
Instructions
In a medium bowl, combine the sweetened condensed milk, shredded coconut, and vanilla extract. Mix well until everything is evenly moistened.
Roll the mixture into small balls, about 1 inch in diameter. Place the rolled balls on a baking sheet lined with parchment paper.
Chill the coconut balls in the refrigerator for at least 30 minutes to firm them up. This step is important before dipping.
While the balls chill, prepare the chocolate coating. Place the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until the chocolate is smooth and fully melted.
Remove the chilled coconut balls from the refrigerator. Dip each ball into the melted chocolate, allowing excess chocolate to drip off, or roll them to coat completely.
Return the coated balls to the parchment-lined sheet.
Refrigerate the chocolate coconut balls for another 15 to 20 minutes, or until the chocolate coating is set.
