Welcome to My Kitchen! I am Carla Davis, and I share my secret for making unbelievably fluffy, high-protein egg bites right in your muffin tin. These copycat Starbucks egg bites are perfect for meal prep, keto-friendly eating, and a quick grab-and-go breakfast. You get that creamy texture using cottage cheese, making them better than store-bought.

Ingredients

Scale
  • 1 cup cottage cheese (full fat or low fat)
  • 12 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (Monterey Jack or cheddar blend)
  • 1/2 cup cooked, crumbled bacon or diced ham (optional)
  • 1/4 cup finely chopped spinach (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Lightly grease a 12-cup standard muffin tin or use silicone liners for easy removal.
  2. In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth and creamy. This step is key for fluffy egg bites.
  3. Stir in the shredded cheese, bacon (if using), and spinach (if using) into the egg mixture by hand. Do not overmix.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  6. Let the egg bites cool in the muffin tin for about 5 minutes before carefully removing them.
  7. Serve warm or cool completely before storing for meal prep.

Notes

  • For the best texture, use a blender to fully incorporate the cottage cheese into the eggs. This mimics the sous vide texture of commercial versions.
  • These egg bites freeze well. Cool them completely, place them in a freezer-safe bag, and freeze for up to one month. Reheat from frozen in the microwave for 60-90 seconds.
  • If you prefer a different flavor, substitute the bacon with cooked sausage or diced bell peppers for veggie egg bites.
