  • 12 oz pasta (spaghetti or linguine)
  • 2 tablespoons olive oil
  • 1 pound cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 cup dry white wine or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions. Reserve 1 cup of the starchy pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook without stirring for 3-4 minutes until they brown. Stir and cook for another 3-4 minutes until tender.
  3. Add the minced garlic and dried thyme to the skillet. Cook for 1 minute until fragrant.
  4. Pour in the white wine or broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2 minutes until reduced slightly.
  5. Reduce the heat to medium-low. Stir in the heavy cream and bring to a gentle simmer. Season with salt and pepper.
  6. Stir in the grated Parmesan cheese until the sauce is smooth. If the sauce seems too thick, add a splash of the reserved pasta water.
  7. Add the fresh spinach to the sauce and cook until it wilts, about 1 minute.
  8. Add the drained pasta to the skillet with the sauce. Toss everything together until the pasta is fully coated. Add more pasta water if needed to reach your desired consistency.
  9. Serve immediately with extra Parmesan cheese on top. This recipe is a great alternative to relying on meal planning services.
