This creamy, cheesy baked corn dip is the ultimate crowd-pleaser for game days, parties, or any gathering. It uses simple ingredients to create a warm, flavorful appetizer that disappears fast.

  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can cream style corn
  • 8 ounces cream cheese, softened
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese, plus extra for topping
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup chopped green onions
  • 1 (4 ounce) can diced green chiles, drained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a similar-sized casserole dish.
  2. In a large bowl, combine the softened cream cheese, mayonnaise, and sour cream. Mix until the base is smooth.
  3. Stir in the drained whole kernel corn, cream style corn, cheddar cheese, Monterey Jack cheese, green onions, and diced green chiles.
  4. Add the chili powder, cumin, and garlic powder to the mixture. Stir everything together until all ingredients are evenly incorporated. Season with salt and pepper.
  5. Transfer the corn dip mixture into your prepared baking dish.
  6. Sprinkle an extra layer of cheddar cheese over the top of the dip.
  7. Bake for 25 to 30 minutes, or until the dip is hot throughout and the cheese on top is bubbly and lightly golden brown.
  8. Let the dip cool for about 5 minutes before serving warm with tortilla chips, crackers, or vegetable sticks.

Notes

  • For a smoky twist, add 1/2 teaspoon of smoked paprika along with the other spices.
  • If you are short on time, you can mix this dip and bake it later, or use a slow cooker set to low for 2 hours.
  • This dip is excellent served with sturdy tortilla chips or sliced baguette pieces.
