  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning mix
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies (like Rotel)
  • 1 cup water
  • 1 (10.5 ounce) can condensed cream of mushroom soup (or cream of chicken)
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9.25 ounces) Fritos corn chips
  • Optional toppings: sour cream, salsa, sliced green onions

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the taco seasoning mix, rinsed black beans, diced tomatoes and green chilies, water, and cream of mushroom soup into the skillet with the beef mixture. Cook for 5 minutes, stirring occasionally, until heated through.
  4. Remove the skillet from the heat. Stir in 1 cup of the shredded cheddar cheese until it melts into the beef mixture.
  5. Spread half of the Fritos corn chips evenly across the bottom of the prepared baking dish.
  6. Spoon the beef and chili mixture over the layer of Fritos.
  7. Sprinkle the remaining 1 cup of cheddar cheese over the top of the meat mixture.
  8. Bake for 15 to 20 minutes, or until the cheese is melted and bubbly.
  9. Remove the casserole from the oven. Top with the remaining half of the Fritos chips just before serving so they stay crunchy.
  10. Serve immediately with your favorite toppings like sour cream, salsa, or green onions.

Notes

  • For a shortcut, you can use one can of your favorite prepared chili instead of making the mixture from scratch.
  • If you prefer a less soupy texture, reduce the water added to the beef mixture by half.
  • To keep the chips crunchy, add them right before serving or sprinkle them over the top layer of cheese only during the last 5 minutes of baking.
