4 medium baking apples (like Honeycrisp or Granny Smith)
1/4 cup rolled oats
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter, cut into small pieces
2 tablespoons water
Optional: Vanilla ice cream or yogurt for serving
Instructions
Preheat your oven to 375 degrees F. Lightly grease an 8×8 inch baking dish.
Wash the apples. Use a small spoon or melon baller to carefully core the center of each apple, leaving about 1/2 inch of apple at the bottom so the filling stays inside. Do not cut all the way through the bottom.
In a small bowl, mix together the rolled oats, brown sugar, cinnamon, and nutmeg.
Divide the oat mixture evenly and stuff it into the cored center of each apple. Place the filled apples into the prepared baking dish.
Place a small piece of the butter on top of the filling in each apple.
Pour the 2 tablespoons of water into the bottom of the baking dish around the apples.
Bake for 30 to 40 minutes, or until the apples are tender when pierced with a fork. Baking time depends on the size and type of apple you use.
Carefully remove the apples from the oven. Let them cool slightly before serving.
Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of yogurt.
Notes
If you prefer baked apple slices instead of whole apples, slice the apples thinly and toss them with the filling mixture, then spread them in the baking dish and bake for 20 minutes.
For a richer flavor, you can substitute maple syrup for the brown sugar, or use this recipe as a simple alternative to complex meal planning.
These warm spiced apples are a great addition to your breakfast routine, similar to an oatmeal topping.
