1 pound ground beef or Italian sausage
1 large onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
4 cups beef broth
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup broken lasagna noodles
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
Instructions
In a large skillet, brown the ground beef or sausage with the onion until cooked through. Drain off any excess grease.
Transfer the meat mixture to your slow cooker. Add the minced garlic, crushed tomatoes, tomato sauce, beef broth, basil, oregano, salt, and pepper. Stir to combine.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
About 30 minutes before serving, stir in the broken lasagna noodles.
Continue to cook until the noodles are tender.
Ladle the soup into bowls. Top each serving with a dollop of ricotta cheese, Parmesan cheese, and mozzarella cheese.
Notes
For a richer flavor, use Italian sausage.
You can substitute turkey or chicken for the ground beef.
If you don’t have lasagna noodles, you can use other short pasta shapes.
This soup freezes well. Let it cool completely before transferring to freezer-safe containers. Thaw overnight in the refrigerator and reheat on the stovetop or in the microwave.
