  • 2 lbs ground beef
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 (14.5 oz) cans diced tomatoes, undrained
  • 1 (15 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can pinto beans, rinsed and drained
  • 1 (4 oz) can diced green chilies, undrained
  • 1/4 cup chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
  2. Transfer the browned ground beef to your slow cooker.
  3. Add the diced onion, minced garlic, and diced red bell pepper to the slow cooker.
  4. Pour in the diced tomatoes (with juice), tomato sauce, and tomato paste. Stir to combine everything well.
  5. Add the rinsed and drained kidney beans and pinto beans, along with the undrained green chilies.
  6. Stir in the chili powder, cumin, oregano, salt, and pepper. Pour in the beef broth. Mix all ingredients thoroughly in the slow cooker.
  7. Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
  8. Stir the chili before serving. Taste and adjust seasonings if needed.
  9. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, remove the lid for the last 30 minutes of cooking time on HIGH.
  • This recipe freezes well; cool completely before transferring to freezer-safe containers.
