  • 2 lbs boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 (8 ounce) can tomato sauce
  • 1/4 cup water
  • 1 tablespoon lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Distribute the sliced onion and bell peppers over the chicken.
  3. Pour the undrained diced green chiles, tomato sauce, and water over the contents of the slow cooker.
  4. In a small bowl, combine the chili powder, cumin, oregano, salt, black pepper, garlic powder, and cayenne pepper (if using). Sprinkle this homemade fajita seasoning blend evenly over the chicken and vegetables.
  5. Add the lime juice over everything.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
  7. Remove the chicken breasts from the slow cooker and place them on a cutting board. Use two forks to shred the chicken completely.
  8. Return the shredded chicken to the slow cooker and stir it well into the sauce and vegetables until everything is coated and heated through.
  9. Serve your juicy slow cooker chicken fajitas immediately with warm tortillas, rice, or as burrito bowls.
