- 1.5 pounds Brussels sprouts
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons balsamic glaze (optional)
- Preheat your oven to 400°F (200°C).
- Wash and trim the Brussels sprouts. Remove any yellow outer leaves.
- Boil the Brussels sprouts in salted water for 5-7 minutes until tender-crisp.
- Drain the Brussels sprouts thoroughly and let them cool slightly.
- Place the cooled Brussels sprouts on a baking sheet lined with parchment paper.
- Using the bottom of a glass or a flat-bottomed mug, gently smash each Brussels sprout.
- Drizzle the smashed Brussels sprouts with olive oil and season with salt and pepper.
- Roast in the preheated oven for 20-25 minutes, or until the edges are crispy and browned.
- In the last 5 minutes of roasting, sprinkle with Parmesan cheese.
- Drizzle with balsamic glaze before serving, if desired.
