  • 3 large heads of garlic
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 large yellow onion, chopped
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Crusty bread, for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Slice about 1/4 inch off the top of each garlic head to expose the cloves. Drizzle the exposed tops with olive oil and wrap the heads loosely in aluminum foil.
  2. Roast the garlic for 35 to 45 minutes, or until the cloves are soft and golden brown. Let them cool slightly.
  3. While the garlic roasts, heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft and translucent, about 6 to 8 minutes.
  4. Squeeze the roasted garlic pulp out of the skins directly into the pot with the onions. Stir to combine.
  5. Pour in the chicken broth. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15 minutes to let the flavors meld.
  6. Carefully transfer the soup mixture to a blender, or use an immersion blender directly in the pot. Blend until completely smooth and velvety.
  7. Return the soup to the pot over low heat. Stir in the heavy cream, Parmesan cheese, thyme, salt, and pepper. Heat through gently; do not boil after adding the cream.
  8. Taste and adjust seasoning if needed. Serve this soul warming dinner hot, garnished with extra thyme, alongside crusty bread for dipping.
