1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
4 slices bacon, cooked and crumbled
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder

1 (1.25 ounce) packet dry ranch seasoning mix
4 cups chicken broth
1 (16 ounce) package potato gnocchi
8 ounces cream cheese, cut into cubes
1/2 cup heavy cream
1 cup shredded cheddar cheese
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 to 7 minutes.
Stir in the crumbled bacon, salt, pepper, garlic powder, and onion powder with the chicken. Cook for 1 minute until fragrant.
Pour in the chicken broth and sprinkle in the dry ranch seasoning mix. Bring the mixture to a simmer.
Add the uncooked gnocchi to the pot. Continue to simmer, stirring occasionally, until the gnocchi floats and is tender, about 5 to 8 minutes.
Reduce the heat to low. Add the cream cheese cubes and heavy cream. Stir gently until the cream cheese has completely melted and the sauce is smooth and creamy.
Stir in the shredded cheddar cheese until it melts into the sauce. Taste and adjust seasoning if needed.
