A creamy one-pot pasta with chicken, bacon, ranch, and cheese for a comforting weeknight meal.

Ingredients

  • 1 lb chicken breast, diced
  • 6 slices bacon, chopped
  • 1 packet ranch seasoning
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 lb penne pasta
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper

Instructions

  1. Cook bacon in a large pot until crispy. Remove and set aside.
  2. Add chicken to the pot and cook until no longer pink.
  3. Stir in garlic, ranch seasoning, and black pepper.
  4. Add pasta, chicken broth, and heavy cream. Bring to a boil.
  5. Reduce heat and simmer for 12 minutes, stirring occasionally.
  6. Stir in cream cheese and cheddar until melted and smooth.
  7. Top with cooked bacon before serving.

Notes

  • For an Instant Pot version, cook on high pressure for 5 minutes with a quick release.
  • Freeze leftovers in airtight containers for up to 3 months.
