  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 8 ounces egg noodles
  • 4 ounces cream cheese, cut into cubes
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked, crumbled bacon
  • 1/2 cup heavy cream (optional, for extra richness)
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a large Dutch oven or stockpot over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the chicken pieces to the pot. Cook until lightly browned on all sides, about 5 minutes.
  3. Pour in the chicken broth. Stir in the Italian seasoning and the dry ranch seasoning mix until dissolved. Bring the mixture to a boil, then reduce heat, cover, and simmer for 10 minutes, or until the chicken is cooked through.
  4. Add the egg noodles to the simmering soup. Cook according to package directions, usually 6 to 8 minutes, until tender.
