A no-cook bean, corn, and avocado salsa that works as a dip or salad. Perfect for parties and potlucks.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt to taste

Instructions

  1. In a large bowl, combine black beans, corn, avocado, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, and salt.
  3. Pour the dressing over the salsa and gently toss to combine.
  4. Cover and refrigerate for at least 30 minutes before serving.

Notes

  • For extra spice, add diced jalapeño.
  • Serve with tortilla chips or as a topping for grilled chicken.
  • This dip stays fresh in the fridge for up to 2 days.
