- 1 (8 inch) package cornbread mix
- 1/2 cup butter
- 1 cup chopped yellow onion
- 1 cup chopped celery
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried sage
- 1/4 teaspoon dried thyme
- 2 cups chicken broth
- 2 large eggs, beaten
- Prepare cornbread according to package directions. Let cool completely.
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat. Add onion and celery, and cook until softened, about 5-7 minutes.
- Crumble the cooled cornbread into a large mixing bowl.
- Add the cooked onion and celery mixture to the bowl with the cornbread.
- Stir in salt, pepper, sage, and thyme.
- In a separate bowl, whisk together chicken broth and beaten eggs.
- Pour the broth and egg mixture over the cornbread mixture and stir gently to combine.
- Transfer the dressing to a greased 9×13 inch baking dish.
- Bake for 30-40 minutes, or until heated through and lightly golden on top.
