A simple and creamy corn casserole, perfect as a holiday side dish or a comforting addition to any meal.

Ingredients

  • 1 (15 ounce) can corn kernels, drained
  • 1 (15 ounce) can creamed corn
  • 1 (8.5 ounce) package corn muffin mix
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the drained corn kernels, creamed corn, corn muffin mix, sour cream, melted butter, and eggs.
  3. Stir until all ingredients are well combined. The batter will be thick.
  4. Pour the batter into the prepared baking dish and spread evenly.
  5. Bake for 40-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Let the casserole cool slightly before serving.

Notes

  • For a sweeter casserole, you can add 1/4 cup of sugar to the batter.
  • If you prefer a less sweet casserole, you can reduce the amount of corn muffin mix or use a less sweet variety.
  • This casserole can be made ahead of time and reheated before serving.
