- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- For the Streusel Topping:
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Add the softened butter and mix with an electric mixer on low speed until the mixture resembles coarse crumbs.
- In a separate small bowl, whisk together the eggs, vanilla extract, and milk.
- Add the wet ingredients to the dry ingredients and mix on medium speed until just combined. Do not overmix.
- Pour half of the batter into the prepared cake pan and spread evenly.
- Prepare the streusel topping: In a medium bowl, combine the flour, brown sugar, cinnamon, and salt.
- Cut in the cold butter with a pastry blender or your fingertips until the mixture forms coarse crumbs.
- Sprinkle half of the streusel topping over the batter in the pan.
- Pour the remaining batter over the streusel and spread evenly.
- Sprinkle the remaining streusel topping over the top layer of batter.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

- For an extra moist cake, you can substitute 1/4 cup of the milk with sour cream or plain yogurt.
