  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated zucchini
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with liners.
  2. In a large bowl, whisk flour, cocoa powder, baking soda, and salt.
  3. Add sugars, oil, eggs, and vanilla. Mix until combined.
  4. Fold in grated zucchini and chocolate chips.
  5. Divide batter into muffin cups and bake for 20-25 minutes.
  6. Let cool before serving or freezing.

Notes

  • Use a box grater to shred zucchini finely.
  • Freeze muffins in airtight containers for up to 3 months.
