Make these easy, no-bake chocolate peanut butter Rice Krispie balls for a quick, satisfying sweet treat. They are perfect for parties or simple snacking.

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1/2 cup butter or margarine
  • 1 teaspoon vanilla extract
  • 4 cups crispy rice cereal
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil (optional, for smoother coating)

Instructions

  1. Combine the peanut butter, sugar, and butter in a medium saucepan. Heat over medium-low heat, stirring constantly until the sugar dissolves and the mixture is smooth. Do not let it boil.
  2. Remove the saucepan from the heat. Stir in the vanilla extract.
  3. In a large bowl, pour the warm peanut butter mixture over the crispy rice cereal. Stir gently until the cereal is fully coated.
  4. Let the mixture cool slightly, about 5 minutes, until it is easy to handle.
  5. Scoop out about 1 tablespoon of the mixture at a time and roll it firmly between your palms to form balls. Place the balls on a baking sheet lined with parchment paper.
  6. In a microwave-safe bowl, combine the chocolate chips and vegetable oil (if using). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth.
  7. Dip each Rice Krispie ball into the melted chocolate, turning to coat completely, or drizzle the chocolate over the balls.
  8. Return the coated balls to the parchment-lined sheet. Allow the chocolate to set completely at room temperature, or chill in the refrigerator for about 15 minutes for faster setting.

Notes

  • For a richer chocolate coating, use melting wafers instead of chocolate chips.
  • If you want to skip the peanut butter, use 1/2 cup of marshmallow fluff mixed with the melted butter and sugar for a classic Rice Krispie base.
  • These treats hold their shape best when stored in an airtight container in the refrigerator.
