Ingredients

Scale
  • 1/2 cup (1 stick) butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 2 1/2 cups quick-cooking oats
  • 1 teaspoon vanilla extract

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine butter, sugar, milk, and cocoa powder.
  3. Bring the mixture to a rolling boil over medium heat, stirring constantly.
  4. Boil for exactly 1 minute, then remove from heat.
  5. Stir in the peanut butter and vanilla extract until smooth.
  6. Add the quick-cooking oats and stir until well combined.
  7. Drop spoonfuls of the cookie mixture onto the prepared baking sheet.
  8. Let the cookies cool completely until set, about 15-30 minutes.

Notes

  • For best results, use quick-cooking oats. Old-fashioned oats may require a longer boiling time.
  • Do not over-boil the mixture, as this can cause the cookies to become dry and crumbly.
  • Do not under-boil, or the cookies will not set properly.
  • Store cookies in an airtight container at room temperature for up to 3 days. For lunchboxes, ensure they are fully set before packing.
