Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (15 ounce) can chili beans, undrained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  2. Stir in the chili beans and diced tomatoes with green chilies. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  3. Reduce heat to low. Add the softened cream cheese and stir until melted and smooth.
  4. Stir in the shredded cheddar cheese and sour cream until well combined and heated through. Do not boil.
  5. Garnish with fresh cilantro, if desired.
  6. Serve hot with your favorite tortilla chips or crackers.

Notes

  • For a spicier dip, add a pinch of cayenne pepper or a dash of hot sauce.
  • If you don’t have cream cheese, you can substitute with Velveeta cheese.
  • This dip can be made ahead and reheated before serving.
