A quick and flavorful chicken stir fry recipe perfect for busy weeknights, featuring tender chicken, crisp vegetables, and a savory sauce.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • For the Sauce:
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch

Instructions

  1. In a medium bowl, toss chicken pieces with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Let marinate for 10 minutes.
  2. In a small bowl, whisk together all sauce ingredients until smooth. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, bell pepper, carrot, and onion. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
  5. Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
  6. Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables.
  7. Stir continuously until the sauce thickens and coats everything evenly, about 1-2 minutes.
  8. Serve immediately over rice or noodles.

  • For a healthier option, use low-sodium soy sauce.
