  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon soy sauce (for marinating chicken)

  • 2 tablespoons vegetable oil, divided
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup sliced celery
  • 4 green onions, cut into 2-inch pieces
  • 1/4 cup low sodium soy sauce (for sauce)
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce (for color)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 cup chicken broth

Instructions

  1. Cook egg noodles according to package directions until tender but still slightly firm. Drain and set aside.
  2. In a bowl, toss the cut chicken pieces with 1 tablespoon soy sauce and cornstarch. Let sit for 5 minutes.
  3. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry until cooked through and lightly browned. Remove chicken from the wok and set aside.
  4. Add the remaining 1 tablespoon of oil to the wok. Add the sliced onion and cook for 1 minute until slightly softened.
  5. Add the minced garlic and cook for 30 seconds until fragrant.
  6. Add the cabbage, carrots, and celery to the wok. Stir-fry for 3 to 4 minutes until the vegetables are crisp-tender.
  7. While vegetables cook, whisk together the sauce ingredients: low sodium soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and chicken broth in a small bowl.
  8. Return the cooked chicken to the wok. Add the cooked noodles and the green onions.
  9. Pour the prepared sauce over the noodles and vegetables. Toss everything together quickly until the noodles are evenly coated and the sauce has thickened slightly, about 1 to 2 minutes.
  10. Serve immediately for a delicious weeknight meal that beats any meal planning service.
