  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped

  • 1/4 teaspoon black pepper

  • 2 cups milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 cup Velveeta or processed cheese, cubed (optional, for extra creaminess)
  • Optional Toppings: Diced pickles, chopped raw onion, bacon bits

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off excess grease.
  2. Add the chopped onion, carrots, and celery to the pot with the beef. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the beef broth, diced potatoes, Italian seasoning, garlic powder, salt, and pepper. Bring the mixture to a boil, then reduce heat, cover, and simmer until the potatoes are tender, about 15 minutes.
  4. In a small bowl, whisk the flour with the milk until smooth. Pour this mixture into the simmering soup, stirring constantly until the soup thickens slightly.
