Instructions
Prepare the peanut butter filling: In a medium bowl, beat together the peanut butter, softened butter, powdered sugar, vanilla extract, and salt until the mixture is smooth and creamy.
Assemble the crackers: Take one graham cracker sheet and spread a layer of the peanut butter mixture evenly over the top surface. Top with a second graham cracker sheet to create a sandwich. Repeat until all crackers and filling are used.
Cut the sandwiches: Slice each graham cracker sandwich in half crosswise to create rectangular bars. You should have two bars per original sheet.
Chill the bars: Place the peanut butter graham cracker bars on a parchment-lined baking sheet. Place the sheet in the freezer for at least 15 minutes to firm up the filling. This step is important for dipping.
Melt the chocolate: Combine the melted chocolate and vegetable shortening (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth.
Dip the bars: Remove the chilled bars from the freezer. Dip each bar into the melted chocolate, ensuring most of the bar is coated, leaving a small circle of the peanut butter filling exposed at the top, resembling a buckeye candy.
