1 cup creamy peanut butter
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
2 tablespoons vegetable shortening
Instructions
In a large bowl, beat together the peanut butter and softened butter until smooth.
Gradually add the powdered sugar and vanilla extract, mixing until a firm dough forms.
Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
Chill the peanut butter balls in the refrigerator for at least 1 hour, or until firm.
In a microwave-safe bowl, combine the chocolate chips and vegetable shortening. Microwave in 30-second intervals, stirring between each, until the chocolate is melted and smooth.
Dip each chilled peanut butter ball into the melted chocolate, leaving a small circle of peanut butter exposed at the top.
Place the dipped buckeye balls back on the parchment-lined baking sheet.
Allow the chocolate to set completely at room temperature or in the refrigerator.
Notes
For a smoother chocolate coating, you can use a toothpick to help coat the balls evenly.
Ensure your peanut butter balls are well-chilled before dipping; this prevents them from falling apart in the warm chocolate.
Store buckeye balls in an airtight container at room temperature for up to a week.
