A simple recipe for classic buckeye balls, a no-bake peanut butter candy dipped in chocolate.

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons vegetable shortening

Instructions

  1. In a large bowl, beat together the peanut butter and softened butter until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until a firm dough forms.
  3. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  4. Chill the peanut butter balls in the refrigerator for at least 1 hour, or until firm.
  5. In a microwave-safe bowl, combine the chocolate chips and vegetable shortening. Microwave in 30-second intervals, stirring between each, until the chocolate is melted and smooth.
  6. Dip each chilled peanut butter ball into the melted chocolate, leaving a small circle of peanut butter exposed at the top.
  7. Place the dipped buckeye balls back on the parchment-lined baking sheet.
  8. Allow the chocolate to set completely at room temperature or in the refrigerator.

Notes

  • For a smoother chocolate coating, you can use a toothpick to help coat the balls evenly.
  • Ensure your peanut butter balls are well-chilled before dipping; this prevents them from falling apart in the warm chocolate.
