A simple and flavorful Italian starter featuring fresh tomatoes, basil, garlic, and olive oil piled on toasted baguette slices.

  • 1 baguette, sliced 1/2 inch thick
  • 2 tablespoons olive oil, plus more for drizzling
  • 2 pounds ripe tomatoes, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic glaze (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange baguette slices on a baking sheet. Brush both sides lightly with olive oil.
  2. Bake for 8-10 minutes, or until golden brown and crisp. Remove from oven and let cool.
  3. In a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, and 2 tablespoons of olive oil.
  4. Season with salt and pepper to your preference. Let the mixture marinate for at least 15 minutes to allow the flavors to meld.
  5. Just before serving, spoon the tomato mixture generously onto each toasted baguette slice.
  6. Drizzle with balsamic glaze, if desired. Serve immediately.
