A quick and fresh one-pan chicken dish topped with tomato-basil bruschetta, perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • 2 cups diced tomatoes
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden.
  4. In a bowl, mix tomatoes, basil, garlic, balsamic vinegar, and remaining olive oil.
  5. Spoon the tomato mixture over the chicken. Top with mozzarella if using.
  6. Bake for 10-12 minutes until chicken reaches 165°F (74°C).
  7. Serve immediately.
