Easy Cranberry Brie Bites with Puff Pastry

Make these simple Cranberry Brie Bites using flaky puff pastry, creamy Brie cheese, and sweet-tart cranberry sauce. This appetizer is perfect for holiday gatherings and entertaining.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 8 ounces Brie cheese, cut into small cubes
  • 1/2 cup cranberry sauce
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a mini muffin tin.
  2. Unfold the thawed puff pastry sheet on a lightly floured surface. Use a round cookie cutter (about 2 inches in diameter) to cut out circles from the pastry. You should get about 12 to 16 circles.
  3. Gently press each pastry circle into the cups of the mini muffin tin, forming a small cup shape.
  4. Place a small cube of Brie cheese into the bottom of each pastry cup.
  5. Top the Brie with about 1/2 teaspoon of cranberry sauce over the cheese.
  6. Brush the edges of the exposed puff pastry lightly with the beaten egg wash.
  7. Bake for 12 to 15 minutes, or until the puff pastry is golden brown and puffed, and the cheese is melted and gooey.
  8. Carefully remove the Brie Bites from the tin using a small offset spatula or knife. Let them cool slightly on a wire rack before serving.

Notes

  • For an extra touch, sprinkle a few chopped pecans or a tiny sprig of fresh rosemary on top of the cranberry sauce before baking.
  • If you do not have a mini muffin tin, you can cut the puff pastry into small squares, place a piece of Brie in the center, top with cranberry sauce, and pinch the corners up to seal the filling inside before baking on a flat baking sheet.
  • You can assemble these appetizers up to 2 hours ahead of time; just cover them and keep them refrigerated until you are ready to bake.
