  • 2 cups cooked chicken, shredded or cubed
  • 6 slices bacon, cooked until crispy and crumbled
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 cup avocado, diced
  • 1/2 cup finely chopped celery (for crunch)
  • 1/4 cup finely chopped red onion (optional)
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 4 large romaine lettuce leaves or 4 slices of whole-grain bread for serving

Instructions

  1. If your chicken is not already cooked, cook and shred or cube it first. You can use rotisserie chicken for speed.
  2. Cook the bacon until it is very crisp. Drain it on paper towels and then crumble it into small pieces.
  3. In a large bowl, combine the cooked chicken, crumbled bacon, halved tomatoes, diced avocado, celery, and red onion if you are using it.
  4. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until smooth. Season the dressing with salt and pepper.
  5. Pour the dressing over the chicken and vegetable mixture. Gently fold everything together until the ingredients are evenly coated. Do not overmix.
  6. Taste the salad and adjust salt and pepper as needed.
  7. Serve immediately over crisp romaine lettuce leaves for a low-carb option, or use it as a filling for a sandwich or wrap.

Notes

  • For meal prep, mix all ingredients except the avocado. Add the avocado just before serving to prevent browning.
  • If you want a keto BLT salad, serve this mixture in large lettuce cups instead of bread.
