A low-carb, family-friendly casserole with ground beef, pickles, cheese, and special sauce.

Ingredients

  • 1 lb ground beef
  • 1/2 cup diced onions
  • 1/2 cup diced pickles
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 2 tbsp mustard
  • 1 tbsp vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Brown ground beef in a skillet over medium heat.
  3. Add onions and cook until softened.
  4. Stir in pickles, garlic powder, onion powder, paprika, salt, and pepper.
  5. Mix mayonnaise, mustard, and vinegar to make the special sauce.
  6. Layer beef mixture in a baking dish and top with cheese.
  7. Bake for 20 minutes or until cheese is melted and bubbly.

Notes

  • For a keto version, use sugar-free pickles.
  • Freeze leftovers in an airtight container for up to 3 months.
