  1. Chill your Prosecco or sparkling wine thoroughly before starting.
  2. Prepare the peach puree by blending ripe peaches until smooth. If you prefer a thicker drink, use frozen peaches and blend them until smooth, which creates a frozen Bellini style.
  3. Pour the peach puree into a chilled champagne flute.
  4. Slowly top the puree with the chilled Prosecco. Pour gently to maintain the bubbles.
  5. Garnish the rim of the flute with a thin slice of fresh peach.
  6. Serve immediately.
