4 oz chilled Prosecco or sparkling wine
2 oz fresh peach puree
1 small peach slice, for garnish
Instructions
Chill your Prosecco or sparkling wine thoroughly before starting.
Prepare the peach puree by blending ripe peaches until smooth. If you prefer a thicker drink, use frozen peaches and blend them until smooth, which creates a frozen Bellini style.
Pour the peach puree into a chilled champagne flute.
Slowly top the puree with the chilled Prosecco. Pour gently to maintain the bubbles.
Garnish the rim of the flute with a thin slice of fresh peach.
Serve immediately.
Notes
For an authentic taste, use high-quality Italian Prosecco.
If you do not have fresh peaches, you can substitute with 1.5 oz of good quality peach nectar instead of puree.
To make a Strawberry Bellini, substitute the peach puree with 2 oz of fresh strawberry puree.
For a richer flavor, add a splash of brandy or peach schnapps to the puree before adding the wine.
