Ingredients

Scale
  • 1 (3-4 pound) beef tenderloin roast
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the beef tenderloin dry with paper towels.
  3. In a small bowl, mix together olive oil, salt, pepper, rosemary, thyme, and minced garlic.
  4. Rub the mixture all over the beef tenderloin.
  5. Place the tenderloin on a rack in a roasting pan.
  6. Roast for 15 minutes at 425°F (220°C).
  7. Reduce the oven temperature to 350°F (175°C) and continue roasting for 30-45 minutes, or until a meat thermometer inserted into the thickest part registers 125°F (52°C) for medium-rare.
  8. Remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing.

Notes

  • For medium-well, roast until the internal temperature reaches 140°F (60°C).
  • Consider using a sous-vide precision cooker for ultimate tenderness before searing.
  • This recipe is a great alternative to meal planning for busy holidays.
