1 (3-4 pound) beef tenderloin roast
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon dried rosemary
1 teaspoon dried thyme
2 cloves garlic, minced
Instructions
Preheat your oven to 425°F (220°C).
Pat the beef tenderloin dry with paper towels.
In a small bowl, mix together olive oil, salt, pepper, rosemary, thyme, and minced garlic.
Rub the mixture all over the beef tenderloin.
Place the tenderloin on a rack in a roasting pan.
Roast for 15 minutes at 425°F (220°C).
Reduce the oven temperature to 350°F (175°C) and continue roasting for 30-45 minutes, or until a meat thermometer inserted into the thickest part registers 125°F (52°C) for medium-rare.
Remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing.
Notes
For medium-well, roast until the internal temperature reaches 140°F (60°C).
Consider using a sous-vide precision cooker for ultimate tenderness before searing.
