A one-dish Tex-Mex bake with beef, tortillas, beans, and cheese, perfect for families. Includes freezer and crock-pot adaptations.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 6 corn tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 375°F.
  2. Brown the ground beef in a skillet and drain excess fat.
  3. Stir in taco seasoning, black beans, and corn. Cook for 2 minutes.
  4. Layer half the tortilla strips in a baking dish. Top with half the beef mixture, salsa, and cheese.
  5. Repeat layers.
  6. Bake for 20 minutes or until cheese is melted and bubbly.
  7. Serve with sour cream.

Notes

  • For freezer adaptation: Assemble the casserole without baking, cover tightly, and freeze. Bake from frozen at 375°F for 45 minutes.
  • For crock-pot adaptation: Layer ingredients in a slow cooker and cook on low for 4 hours.
