4 large baking potatoes, scrubbed
1 tablespoon olive oil
1 cup chopped yellow onion (about 1 medium)
2 cloves garlic, minced
4 cups chicken broth
2 cups milk
1/2 cup shredded cheddar cheese
1/4 cup sour cream
2 tablespoons chopped fresh chives
Salt and black pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Pierce the potatoes several times with a fork and bake directly on the oven rack for 50-60 minutes, or until tender.
While the potatoes are baking, heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
Add the minced garlic and cook for 1 minute more until fragrant.
Pour in the chicken broth and bring to a simmer.
Once the potatoes are baked, let them cool slightly. Scoop the flesh out of the potato skins and add it to the pot with the broth mixture. Discard the skins.
Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a regular blender and blend until smooth, then return it to the pot.
Stir in the milk and heat gently over low heat. Do not boil.
Stir in the shredded cheddar cheese and sour cream until melted and combined.
Season with salt and black pepper to your taste.
Ladle the soup into bowls and garnish with fresh chives.
Notes
For a thicker soup, use fewer potatoes or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the simmering soup.
You can bake the potatoes ahead of time to save on prep time.
Top with crispy bacon bits, extra cheese, or a dollop of Greek yogurt for added flavor and texture.
